Summer calls for a cold, refreshing drink in hand at all times, and we think this frozen watermelon version of the classic mojito is the perfect one. Perfectly sweetened and refreshingly minty, this fruity summer cocktail will be your new go-to poolside drink. Keeping in tradition with a classic mojito, this frozen mojito also includes plenty of mint and limes, but it is upgraded even further with frozen blended watermelon. There is nothing that screams summer more than a perfectly ripe watermelon, and this mojito helps us celebrate that all summer long. Warning: After trying it, you may want to keep watermelon in your freezer all summer long so you’re ready to make one at a moment’s notice. 😉

How To Make A Frozen Watermelon Mojito

INGREDIENTS:

  • Mint Leaves: What’s a mojito without mint?! And luckily, summer is the season of mint. You can’t go wrong with fresh mint, and this recipe especially wouldn’t be the same without it.
  • Granulated Sugar: To make your mint simple syrup, you will need granulated sugar because it dissolves easily in hot water and doesn’t leave any extra flavoring, so that the mint can really shine.
  • Water: Simple syrup is made from equal parts sugar and water, so water is important here for you to get your syrup on.
  • Cubed Seedless Watermelon: To get that ideal frozen, slushy consistency, freeze your watermelon before blending it up. You can do this up to 2 hours in advance, or chop some up and keep them in the freezer for up to a month. In the meantime, you can use your frozen slices in other blended beverages, like our frozen watermelon margaritas.
  • Limes: The acidity from the lime juice really brings out the watermelon and mint while also making sure that this drink isn’t too sweet.
  • White Rum: White rum is the traditional liquor that is used in a mojito because it has a clean, crisp flavor that doesn’t overpower the mint or the limes.

STEP-BY-STEP INSTRUCTIONS:

You can make the mint simple syrup ahead of time and even keep it in your fridge for up to a week so that you can whip up this drink at a moment’s notice. Combine the mint, sugar, and water in a small pot and bring to a boil. Stir a little bit to help the sugar dissolve. Boil for one minute and then remove the pot from the heat. Allow the pot to cool completely before straining out the mint leaves and storing the syrup in your fridge until ready to use.

Freeze your watermelon cubes on a sheet tray in a single layer for at least two hours or up to 1 month. When you have frozen watermelon around, you can make this drink at any time!

Blend the frozen watermelon with the lime juice, rum, and mint simple syrup. Add more simple syrup to taste and divide the drink between 2 glasses. Garnish with a lime wedge.
