Sweet honey, spicy gochujang, and savory scallion cook down into a glossy glaze that coats every bite of shrimp, creating the perfect balance of heat and sweetness.

Building the wraps:
These wraps are especially weeknight-friendly because of how quickly they come together. The shrimp cook in just a few minutes, and then the sauce thickens in the same skillet, building the flavors and making for easy cleanup. If you want to tame the heat and fermented punch of the gochujang flavor, swap it for chili garlic sauce. Butterhead lettuce is my favorite pick for these thanks to its soft, cup-like leaves, but romaine hearts or iceberg cups will work in a pinch.

Make ahead & storage:
These wraps are best served immediately while the shrimp are warm and glossy, but the shrimp and sauce can be made up to 2 days ahead and refrigerated separately from the lettuce. Reheat gently in a skillet or the microwave before assembling, then add the carrots, scallions, and sesame seeds just before serving.

Ingredients

  • 1 Pound large shrimp, peeled, tails removed
  • 2 garlic cloves, grated
  • Kosher salt
  • 2 Tablespoon toasted sesame oil
  • 0.25 Tablespoon honey
  • 0.25 Tablespoon low-sodium vegetable broth
  • 2 Tablespoon gochujang or chili garlic sauce
  • 2 scallions, thinly sliced, green and white parts separated
  • Butterhead lettuce leaves, matchstick carrots, and toasted sesame seeds, for serving

Directions

Step 1

Pat shrimp dry. In a medium bowl, toss shrimp and garlic; season with salt.

Step 2

In a large skillet over medium heat, heat oil. Add shrimp and cook, turning halfway through, until pink and cooked through, about 2 minutes per side. Transfer to a plate.

Step 3

In same skillet, whisk honey, broth, gochujang, white scallion parts, and 1/4 tsp. salt. Bring to a simmer and cook, stirring occasionally, until thickened to a glaze, 3 to 4 minutes. Remove from heat.

Step 4

Return shrimp to skillet and toss to coat.

Step 5

Divide shrimp among lettuce leaves. Top with carrots, scallion green parts, sesame seeds, and remaining glaze.
