A dip is always welcome at cocktail hour, but a whipped cheese dip will always reign supreme in our eyes. This recipe pairs two viral favorites—whipped ricotta and hot honey—into one quick and easy appetizer that you’ll come back to again and again (and again). Whipped ricotta goes with just about anything, but this combo is for the sweet and spicy lovers.

The components:
For the hot honey, I personally like Whole Foods or Bees Knees brand, but I do recommend making your own too! Depending on the brand, ricotta can be very creamy and smooth (smaller curds), so I love using Calabro or Galbani. All you have to do is add it to a food processor and drizzle in some oil with the motor running. Once it’s smooth, like the texture of Greek yogurt, go ahead and drizzle the top with hot honey.

Storage:
Store whipped ricotta in an airtight container in the refrigerator up to 2 days. Add the hot honey drizzle right before serving.

Ingredients

  • 6 Tablespoon extra-virgin olive oil, divided
  • 4 bread slices, cut into 2 diagonal pieces
  • 16 Ounce whole milk ricotta (such as Luizi)
  • 1 small garlic clove, grated
  • 1 Teaspoon kosher salt, divided
  • 3 Tablespoon hot honey
  • 1 Teaspoon coarsely chopped fresh rosemary

Directions

Step 1

In a large skillet over medium-high heat, heat 4 Tbsp. oil. Carefully place bread in oil and fry, reducing heat to medium if bread begins to darken, until golden brown on each side, 1 to 2 minutes. Transfer to a paper towel-lined plate. Repeat with 1 Tbsp. oil and remaining bread. Sprinkle bread with 1/4 tsp. salt.

Step 2

In a food processor, blend ricotta, garlic, and 3/4 tsp. salt. With the motor running on low speed, stream in remaining 1 Tbsp. oil.

Step 3

Transfer whipped ricotta to a serving bowl. Using the back of a spoon, spread it around, making swirls and dollops. Drizzle ricotta with hot honey. Sprinkle with rosemary.
