Directions

Step 1

Carefully peel the pomelo, removing the thick outer rind and the white pith until the fruit is fully exposed. Gently separate the pomelo into individual segments, then peel away the tough membrane surrounding each segment, as it can be bitter and chewy. Break or tear the flesh into bite-sized pieces using your hands, removing any seeds you come across. Transfer the prepared pomelo pieces to a bowl and set aside while you prepare the remaining ingredients.

Step 2

Wash the tomatoes, cucumber, and red onion thoroughly before preparing them. Cut the tomatoes into quarters, or into smaller bite-sized pieces if they are large. Slice the cucumber into thin, even rounds or half-moons, depending on your preference, to ensure they mix well with the other ingredients. Peel the red onion and slice it as thinly as possible for a milder flavor and better texture. If you find the onion’s taste too sharp or pungent, soak the slices in a bowl of cold water for about 5 to 10 minutes, then drain well and pat them dry before adding them to the salad.
