Steak au poivre is a classic dish composed of seared peppercorn-crusted steak with a creamy pan sauce. This version by chef Miner del Mundo is slightly different in presentation but very familiar in flavor, with the peppery notes coming in in liquid form. It is accompanied by pomme puree or creamy mashed potato, which can be easily switched with sweet potato.
