  • 4 Clove garlic, chopped
  • 1 Medium onion, sliced
  • 700 Gram chicken, mix parts
  • 1 thumb ginger, julienne
  • 400 Milliliter coconut milk
  • 1 Stalk lemongrass
  • 1 Tablespoon fish sauce
  • 0.5 Cup chili leaves
  • 3 Piece green chili, whole
  • Salt and pepper to taste

Directions

Step 1

Begin by heating the cooking oil in a clean pot over medium heat, allowing it to warm evenly before adding the aromatics. Once the oil is hot, add the minced garlic and sauté gently until it becomes fragrant and lightly golden, being careful not to let it burn. The aroma from the garlic will help create a flavorful base for the dish. Next, add the sliced onion and ginger, then continue cooking while stirring occasionally to help release their natural flavors. Allow the ingredients to sauté until the onion becomes soft and slightly translucent, and the ginger releases its warm, aromatic taste. This step helps build a rich and flavorful foundation that will enhance the taste of the dish as the remaining ingredients are added.

Step 2

Once the garlic, onion, and ginger have softened and released their flavors, carefully add the chicken pieces to the pot. Stir the chicken gently to coat each piece with the aromatic mixture, allowing the flavors from the garlic, onion, and ginger to infuse into the meat. Continue cooking over medium heat for about 5 to 7 minutes, stirring occasionally to ensure that the chicken cooks evenly on all sides. Step 3

Afterward, slowly pour in the coconut milk and add the lemongrass stalk to the pot. Reduce the heat to low to medium and bring the mixture to a gentle simmer. Let it cook slowly, allowing the flavors of the chicken, coconut milk, and lemongrass to blend together while maintaining the smooth and creamy texture of the sauce. Avoid bringing the coconut milk to a rapid boil to prevent it from separating.

Step 4

Once the mixture reaches a gentle simmer, cover the pot with a lid to help retain the heat and allow the chicken to cook evenly. Let the dish simmer over low heat for about 25 to 30 minutes, or until the chicken becomes tender and is fully cooked through. During this time, the chicken will slowly absorb the flavors of the coconut milk, lemongrass, and seasonings, creating a richer and more flavorful dish.
