What is kamias?

Kamias is a highly acidic tropical fruit native to southeast Asia. Also known as bilimbi or tree sorrel, it is closely related to the starfruit (carambola).

Recipe Tip

  • To make your shake, use ripe fruit as it lends the most flavor. Avoid underripe fruit or else it will taste flat and watery.
  • Control your ice (very important). Use crushed ice for smoother blending. Don’t overload the blender—too much ice makes it watery. Better trick: freeze the fruit instead of adding too much ice.
  • Too tangy to your liking? Add sugar syrup or honey to balance the taste.

  • 3 Cup ripe kamias
  • 2.5 Tablespoon honey
  • 1 Cup cold water
  • 2 Cup ice cubes

Step 1

Blend all the ingredients together in a blender or food processor until the mixture becomes smooth and creamy, with no visible lumps. This usually takes about 30 seconds to a minute, depending on your blender.

Step 2

If you prefer a finer, smoother texture—especially if there are seeds, pulp, or fibrous bits—you can pour the mixture through a strainer. Use a spoon to gently press the liquid through, leaving any solids behind. This step is optional, so feel free to skip it if you enjoy a thicker or more natural texture.
