Recipe Tip:

Clean it very well first (most important step). Rinse the salmon head under cold running water. Scrub gently, especially gills (if still attached). Remove any blood clots or dark bits (these cause strong smell). Ask the fish vendor to remove gills—they’re the main source of fishy odor.

Ingredients

  • 1 Tablespoon cooking oil
  • 1.5 Cup water
  • 500 Gram salmon head
  • 4 Clove garlic
  • 1 Medium ginger, julienned
  • 1 Teaspoon whole peppercorn
  • 0.5 Cup white vinegar
  • 8 Piece kamias, sliced
  • 1 Small bitter lemon, diagonal
  • 3 Piece bay leaves
  • 2 Piece red chili (iling labuyo)
  • salt to taste

Directions

Step 1

Combine oil, water, bangus, garlic, ginger, peppercorns, and vinegar in a pan.

Step 2

Add kamias, laurel, and sili.

Step 3

Simmer until the fish is cooked and the sauce reduces.
