  • 4 Tablespoon oil
  • 4 Clove garlic, minced
  • 1 Small onion, chopped
  • 1 Medium (2.5 cm) knob ginger, julienned
  • 0.5 Kilogram chicken, cut into pieces
  • 4 Piece native tomatoes, quartered
  • 1 Liter water
  • 1 Stalk lemongrass
  • Pinch of salt and pepper to taste

Directions

Step 1

In a pot over medium heat, pour canola oil. Add the garlic, onion, and ginger, and sauté until fragrant, about 2–3 minutes. This forms the flavorful base for the chicken.

Step 2

Add the chicken pieces and chopped tomatoes to the pot. Stir and cook until the chicken turns lightly golden on all sides. The tomatoes will start to soften and release their juices, enhancing the flavor.

Step 3

Pour in enough water to partially cover the chicken, and add lemongrass stalks for a fragrant aroma. Season with salt and pepper to taste. Lower the heat, cover the pot, and simmer for about 15 minutes, or until the chicken is tender and infused with the flavors of the aromatics.

Step 4

Take a piece of banana leaf and place a portion of chicken along with some cooked vegetables (like tomatoes etc.) on it. Spoon about 1 cup of the flavorful broth over the filling. Fold the banana leaf into a secure pouch, tucking the sides neatly to hold everything together.

Step 5

Carefully return the banana leaf pouch to the pot with the remaining broth. Let it simmer briefly—just a few minutes—to allow the flavors from the chicken, vegetables, and lemongrass to meld together.

Step 6

Serve the chicken hot, right in the banana leaf pouch for a beautiful presentation. The result is tender, aromatic chicken with subtly infused vegetables and broth, perfect with steamed rice.
