After its successful debut in Metro Manila in 2025, the event is making its highly anticipated comeback—this time in Cebu from November 13 to 15, with industry-only events on November 12 and 16.
What’s to Come at the Philippine Cocktail Fiesta 2026
Expect lots and lots of, well, drinking. Almost 40 venues from across Cebu City, Mandaue City, and Mactan will be joining in the celebration, as well as 25 guest shifts and cocktail pairings.
Tipples will be plenty, with participating bars and bartenders from across the Philippines—Manila, Davao, Angeles City, Dumaguete, La Union, and Siargao, alongside Cebu’s many local talents. Also joining in are celebrated players from Beijing, Bangkok, Guangzhou, Hanoi, Hong Kong, Jakarta, Kaohsiung, Kuala Lumpur, Macau, New Delhi, Singapore, Taichung, and Tokyo.
Also to be held as part of the festival is its first Bar Congress—a full-day summit where industry experts from across Asia will be sharing their insights on related topics.
Participating venues will also be giving out Philippine Cocktail Fiesta Passports with leads to exclusive Fiesta promotions in Cebu throughout the month.

The Philippine Cocktail Fiesta’s Beginnings

“What struck me was how these festivals helped people discover a city and connected its bar scene to the wider Asian cocktail community,” she tells Delish Philippines. “It was more than bar-hopping—it was a [whole] cultural experience using bars as a platform to connect, learn, and collaborate. I kept wondering why, after the pandemic, we didn’t have something like this in the Philippines.”
Tatum, who was based in Hong Kong at the time, sought to bring the concept to her motherland—and in early 2025, she took it upon herself to pitch the idea by making cold calls to bars and other figures in the drink industry. Thankfully the responses were largely favorable, which allowed Tatum to push through with her proposal.
The first edition of the festival was spearheaded by online beverage publication DrinkCollectiv (which Tatum founded), along with cocktail venture Drinks Be With You (DBWY) representing the community of bars and bartenders on board. Bringing festivities to life were 100 participating bars, 44 guest shifts, dinners, and industry events, and 38 international guest bartenders.
“It really became a collective effort involving the bars, bartenders, brands, partners, and everyone who took a chance on a first-year festival,” Tatum shares. “DrinkCollectiv laid the foundation for the festival and connected it to the wider Asian bar community, while DBWY and their network across the Philippine drinks industry helped us execute it on the ground.”
“Looking back, it’s quite incredible. We received great feedback from across the Philippines and neighboring countries,” she continues.
Expanding Horizons for 2026
As successful as the first Cocktail Fiesta turned out to be, Tatum sought to broaden their scope even further for 2026. “This year, we decided to make the Fiesta a rotating-city program so we could spotlight other parts of the Philippine bar scene,” he shares.
“Moving the festival allows us to bring international bars, media, and hospitality professionals from across Asia, as well as those from Manila and other parts of the Philippines, to different host cities, giving them the opportunity to experience each destination’s food, drinks, bar community, and culture firsthand.”
They thus set their sights on the Visayas region—Cebu, in particular, with its blossoming beverage industry.
“The Cebu cocktail scene is in an exciting, formative stage,” says Aaron Aw, partnerships manager of the Philippine Cocktail FiestaFiestaA community celebration held in honor of a town or barangay's patron saint, marked by processions, music, and long tables of food. Every household opens its doors to guests, soGo to Fiesta Glossary (also also executive vice president of Destileria Limtuaco & Co., Inc. and co-founder of DBWY). “Local bartenders and bars have been experimenting with craft mixology for over a decade, meaning the talent on the ground is phenomenal, it often outpaces current local demand due to the higher relative price point of premium craft drinks,” he tells Delish Philippines.
“What makes the Visayan scene so vibrant right now is its incredible access to local ingredients. Bartenders here are creatively using regional produce, local spirits, and unique flavor profiles that are unique to Cebu. The talent is fully ready; it’s just a matter of expanding the audience.”
With these points in mind, the Philippine Cocktail Fiesta organizers formed a Cebu Fiesta Committee, in collaboration with leaders in the local bar and hospitality industry. “They’ve been instrumental in helping us navigate the local landscape and connect with a diverse mix of venues—from established cocktail clubs to up-and-coming neighborhood spots and speakeasies. Rather than just spotlighting a select few, our goal is to involve every venue with a cocktail program [and are] eager to join this cultural exchange,” says Aaron.
“While Metro Manila has a vibrant scene, we wanted to highlight another dimension of Philippine heritage, different landscapes, culinary traditions, and native ingredients. Bringing our lineup of international bartenders and global media to the Queen City of the South opens up new avenues for cross-cultural exchange and regional tourism.”
Aaron gives a shout out to the Department of Tourism Central Visayas and the Tourism Promotions Board for the support they had extended to bring the vision to fruition.
The Philippines as a Destination for Great Craft Cocktails

Every household opens its doors to guests, soGo to Fiesta Glossary has been a deliberate, long-term vision,” Aaron continues. “We want to position the Philippines not just as a travel destination, but as a premier creative hub for beverage culture, elevating mixology from late-night nightlife into a respected pillar of culinary arts and F&B tourism.”
This is right in line with one of their other goals—to share the love of drinking, not just for the sake of getting drunk. “Culturally, one of our biggest hurdles is overcoming the common tendency to view all drinking through the lens of binge consumption,” says Aaron.
“Our mission is to offer a meaningful alternative: teaching people to drink better, not harder. Just as the culinary world distinguishes everyday dining from fine dining, we want to show both consumers and venues that craft beverages can be thoughtful, high-quality expressions of flavor and craftsmanship.”
