At first glance, FelChie’s seems like the kind of place built around cold things like ice cream, cold drinks, and flavors served straight from the freezer.

But spend just a few minutes inside their colorful BF Homes Aguirre branch, and the irony becomes clear. Beneath tubs and pints of Cadbury, durian, guyabano, and Oreo with cheese, is a business built not on coldness but on warmth—warm conversations, genuine hospitality, and a deeply personal sense of community.

How FelChie’s started during lockdown

That warmth, according to founder Felixberto Roslin, started at home when lockdowns turned home kitchens into laboratories for comfort food and survival. In their household, Felixberto’s wife, Richie, began experimenting with whatever ingredients they had at home. This quickly turned into something serious after she whipped up a Cadbury chocolate ice cream that was rich and indulgent, but not too sweet to trigger a sugar crash.

The flavor became an instant hit among family and friends, prompting the couple to start selling homemade tubs online. Before long, demand had grown enough for FelChie’s to open a physical store. But even then, the space was never meant to simply sell dessert.

“We’re not just selling ice cream,” the Felixberto explained during the interview. “We’re selling an experience.”

What “cold happiness” means at FelChie’s

That philosophy is condensed into their tagline, “Cold Happiness.” On paper, it sounds playful and fitting for an ice cream shop. In practice, however, it serves as the foundation for how they operate, shaping everything from the warmth with which customers are welcomed into the store to the conversations staff share with regulars, and even the shop’s pet-friendly policy.

Naturally, that philosophy extends to the ice cream itself.

During my visit, I tried their CadChoco—the very same flavor that started it all. A few spoonfuls in, and I immediately understood why it stood out. Despite coming straight out of their freezer, it was still soft and velvety, dense but not heavy. It melts the moment it touches your tongue, before eventually coating the inside of your mouth in a layer of chocolate that isn’t sweet, but not at all bitter.

Their pistachio was earthy and toasted, with a subtle nuttiness that became more pronounced as the spoonfuls melted. The texture was silky and smooth, carrying a richness that never felt too indulgent. It lacked the loud sweetness of more commercial flavors, but made up for it with restraint, balance, and depth. I also tried one of their bestsellers, Oreo with Cheese—a combination that initially sounded more confusing than convincing. In reality, it’s a frozen version of Oreo cheesecake. The richness of the cheese tempers the sweetness of the oreos, creating a flavor that feels surprisingly balanced rather than gimmicky.

Why durian is FelChie’s signature flavor

It’s fitting, then, that one of FelChie’s defining flavors is durian, a fruit notorious for dividing opinion. Strong-smelling and often misunderstood, durian has become more than just a menu item; it’s a reflection of the brand itself. For Felixberto and Richie, the fruit represents an opportunity to challenge assumptions. Many customers walk in skeptical, sometimes even resistant. Yet they treat that hesitation as an invitation. By transforming durian into something smooth, creamy, and comforting, they hope to change the way people think about flavors that they may otherwise dismiss. 

That same openness to experimentation runs throughout the menu. Beyond plain durian are combinations like durian with cheese or coffee, guyabano and the now-signature Oreo with cheese. On paper, the lineup can seem unpredictable, even chaotic. But underneath it all is a clear philosophy: flavors that sound strange together can still become unexpectedly good when approached with care, curiosity, and balance.

For them, innovation isn’t just about novelty for novelty’s sake. Behind the playful combinations is a long-term vision shaped by careful planning. Felixberto shared that they operate on a strategy focused on product differentiation with the goal of creating flavors distinct enough to stand out in an increasingly crowded dessert market without alienating customers.

Topping it off with community

Equally important for them is what goes into the ice cream itself. FelChie’s takes pride in using all-natural ingredients, avoiding artificial flavorings and colorings while keeping sugar levels relatively low. They’re also big on sustainability with containers and labels made from biodegradable materials, and ingredients locally sourced in support of Filipino farmers and producers.

Even as the brand grows, they insist that FelChie’s will remain rooted in people and community.

One of the company’s more unconventional initiatives is a program aimed at encouraging entrepreneurship among young Filipinos. Participants help manage the company’s social media and website in exchange for commission-based earnings. Rather than simply building an audience, the program reflects the brand’s desire to create opportunities for others .

That same mindset shapes their larger ambitions. While the company hopes to eventually bring Filipino ice cream to a global audience, Felixberto says they are less interested in exporting physical products than in “exporting talent.” Instead of just shipping tubs overseas, the goal is to teach international partners how to recreate the flavors and experience themselves.

Throughout our conversation, Felixberto repeatedly returned to the idea of positivity. Life, he explained, is already short, so people should spend more of it pursuing what excites them rather than dwelling on negativity. That philosophy influences everything from the way staff interact with customers to the company’s customer-first policy, where dissatisfied guests are offered refunds without hesitation.

What really makes FelChie’s memorable isn’t just the ice cream, though the flavors are difficult to forget. It’s the contradiction at the heart of the brand: a business centered on frozen desserts that somehow feels warmer than even the hottest summer day.

The ice cream may be cold, but the experience at FelChie’s rarely is.
