It might be easy for a restaurant that earns the Philippines its first two Michelin stars to go big for its much anticipated new menu. Don’t expect Josh Boutwood to go down that road. If anything, he’s doing the opposite.

At Helm, his latest tasting menu, Single Ingredient, strips away unnecessary distraction to zero in on one ingredient at a time. Rather than layering multiple components onto a plate, each course asks a simpler question: How far can one ingredient go?
“It came from the search for simplicity,” Boutwood says. “It’s really an ode to the ingredients I enjoy working with and eating.”
The concept follows Helm’s monochromatic tasting menu, which challenged the kitchen to cook within a single color palette per dish. This time, the restriction is even more meticulous as every course revolves around just one ingredient, explored through a variety of preparations, textures, and techniques.
“‘Single Ingredient’ is about finding complexity through simplicity and challenging ourselves to see how far we can take one ingredient,” says the celebrated chef. “It means pulling the focus onto one singular ingredient per course and extracting the maximum flavor and texture through different preparations and techniques. The idea is to explore everything that one ingredient has to offer.”
How Pumpkin, Cod, and Lamb Become Entire Culinary Stories
The repertoire treats humble produce with genuine curiosity. Pumpkin is stretched beyond its limit through a custard, lacto-fermentation, roasted seeds, and an XO sauce made from the vegetable’s own skin. Cod reveals itself through a steamed fillet, confit bacalao, and skin converted into snow, while lamb is fully utilized via a terrine made from the belly and loin, and a roasted tenderloin paired with a jus made from the bones of the lamb.
Completing the ensemble are ingredients such as chocolate, A5 wagyu, bluefin tuna, and American lobster that receive the same treatment—aimed not to show off, but to uncover flavors and forms diners rarely experience.
“It always starts with the ingredient,” Boutwood explains. “We source products we genuinely enjoy working with, then spend a lot of time figuring out the best way to bring out their flavor and texture. If we can’t do something interesting with it, it doesn’t make the menu.”
For Boutwood, however, no single plate defines the experience. “It’s never about a single dish,” he says. “It’s really the progression of the menu that tells the story.”
Why Josh Boutwood Didn’t Change Helm After Michelin
That philosophy has remained the same even after Helm received two Michelin stars in the inaugural Michelin Guide Philippines 2026. While the elusive recognition placed the restaurant in a category of its own, it hasn’t altered the way the kitchen approaches its work.
“Honestly, nothing’s really changed,” Boutwood says. “We’re grateful for the recognition, but once service starts, it’s just about cooking and looking after the guests. That’s always been the focus.”
Served inside Helm’s intimate 24-seat dining room overlooking Ayala Triangle Gardens, the latest tasting menu invites diners to rediscover ingredients they thought they already knew.
It actually makes for a pretty compelling statement: do away with any distractions and, with the proper technique and imagination, you’ll be surprised to find out just how much flavor and texture can come from a seemingly meek ingredient.
